Our vanilla beans are traditionally grown with a sun-dried/cured process. Our farmers are highly trained, and we do not sell beans that have been quickly cured in a matter of days. Instead, our beans are cured in the traditional way over a period of months by our dedicated farmers who constantly hand-pollinate all the vines.
Essence Food & Beverage does not sell vanilla beans that are smoked, as it would interfere with the aroma, texture, and vanilla flavor. From the time the vines are hand-pollinated, cured, and packed, the whole process is labor-intensive.
Walking through the jungle of Java Island, Indonesia, you'd imagine the wholesome aroma of warming vanilla, but this doesn't actually occur until the pods have been treated and cared for, which is a hand-cured process to prevent ripening. This is done by plunging the pods into boiling water and then leaving them to dry in the sun, allowing them to ferment and dry for 6 to 9 months.
Indonesia has seen soaring growth in the vanilla market due to its perfect tropical climate of rain and sunshine, which is best suited to grow an abundance of rich vanilla pods, each filled with high amounts of caviar bursting in aroma and flavor. It's through this natural process of hand-curing, sun drying, and fermentation that the beans take on their iconic smokey hue, filled with delicious aromatic vanilla caviar.
Our Grade A Vanilla Beans reach the highest quality you'll ever find. They are at least 5-8 inches long, plump, freshly harvested, and have a moisture content of 22%, which will maximize the scent and flavor in your kitchen. In normal range measurement, our beans can be converted to two beans in the market. Indonesian vanilla beans are best known for their large amounts of caviar, consisting of nutrients in every vanilla pod, attracting the rising market and demands for vanilla beans in the baking and flavoring industry.
